- 1 cup butter room temperature
- 1 cup sugar
- 1 large egg
- 1 tsp vanilla extract
- Zest of 1 whole lemon
- 2 1/2 cups all-purpose flour or gluten-free flour
- 1 tsp baking powder
- 1/4 cup milk
- 1/2 cup fruit jam raspberry, strawberry, apricot, etc.
- Confectioners' sugar optional, for dusting
Cream together butter and sugar until light and fluffy.
Add egg, vanilla extract, and lemon zest, mixing until combined.

Sift flour and baking powder, then alternate adding dry ingredients with milk to form dough.

Roll dough out to 1/4 inch thick on a floured surface. Cut into circles with a round or scalloped cutter.

For a window effect, cut small shapes out of half the cookies.
Preheat oven to 375°F (190°C). Bake for 8-10 minutes or until lightly golden.
