Ingredients
  

  • 1 cup butter room temperature
  • 1 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • Zest of 1 whole lemon
  • 2 1/2 cups all-purpose flour or gluten-free flour
  • 1 tsp baking powder
  • 1/4 cup milk
  • 1/2 cup fruit jam raspberry, strawberry, apricot, etc.
  • Confectioners' sugar optional, for dusting

Instructions
 

  • Cream together butter and sugar until light and fluffy.
  • Add egg, vanilla extract, and lemon zest, mixing until combined.
  • Sift flour and baking powder, then alternate adding dry ingredients with milk to form dough.
  • Roll dough out to 1/4 inch thick on a floured surface. Cut into circles with a round or scalloped cutter.
  • For a window effect, cut small shapes out of half the cookies.
  • Preheat oven to 375°F (190°C). Bake for 8-10 minutes or until lightly golden.
  • Spread jam on solid cookies and top with the cut-out cookies to create a sandwich.
  • Cool completely, then dust with powdered sugar before serving (optional).

Notes

  • Use thick jams to avoid spreading during baking.
  • Store in an airtight container at room temperature for up to a week.
