- Zest of 1 whole lemon

- 1 tsp baking powder
- 1/4 cup milk
- 1/2 cup fruit jam (raspberry, strawberry, apricot, etc.)
- Confectioners’ sugar (optional, for dusting)
Instructions
- Cream together butter and sugar until light and fluffy.
- Add egg, vanilla extract, and lemon zest, mixing until combined.
- Sift flour and baking powder, then alternate adding dry ingredients with milk to form dough.
- Roll dough out to 1/4 inch thick on a floured surface. Cut into circles with a round or scalloped cutter.
- For a window effect, cut small shapes out of half the cookies.
- Preheat oven to 375°F (190°C). Bake for 8-10 minutes or until lightly golden.
- Spread jam on solid cookies and top with the cut-out cookies to create a sandwich.
- Cool completely, then dust with powdered sugar before serving (optional).
